Frangelico cupcakes

Can you believe the silly season is upon us already? Everyone I talk to can believe this year is nearly over and neither can I. It still feels like its August. The years are just going by at lightning speed and I can’t catch up.
Last weekend Miss Daisy (the caravan) and the team went down to Geelong, what a beautiful part of the world, for the Geelong motoring Revival Festival. It was such a blast, I had such a great time and Miss Daisy fitted in so well with all the old cars. It started on Friday with all the old Cars cursing around the foreshore and through the streets of Geelong, you would have thought you had stepped back in time. Geelong is full with all these old beautiful buildings and when every car that went pass was a classic, you would have sworn you were on the set of a Movie.

Mum and I went down on the Friday to set up as the event didn’t start till Saturday. I don’t really know much about car races but I think all the Cars were doing time trials, as it wasn’t a huge race course or anything. I saw a few of the cars speed off down the course but mostly only saw the four walls of Daisy and the coffee machine.

On the Saturday night we had to navigate Miss Daisy around all the food vendors as she had been asked to go to the cocktail party and serve up some coffees and cakes. Everyone had dressed up for the occasion in all their retro gear. There was an amazing singing trio, who were dressed in vintage army uniforms and sang some classics. They were called The Pacific Belles, and they were out of this world amazing. Ater the coaktail party we had to get Miss Daisy back to the foreshore and into her spot for tomorrow. A lovely Man and his beautiful wife went out of their way to help me put Miss Daisy back into her spot, thank you so much Jordan. It was a very long day and the team and I were so tired by the end of the day. The next day we were up and Adam again feeling a lot worse for wear, but back we went to serve some more coffees and cakes. Franjelico cupcakes

Cook time: 30 mins
Total time: 40 mins
Serves: 12
Ingredients
  • 2 1/2 cups of flour
  • 1 1/2 cups brown sugar
  • 1 teaspoon baking powder
  • 100g butter
  • 1 cup milk
  • 2 eggs
  • 1/4 cup peanut butter
  • 1/2 cup hazelnuts
  • 1/4 cup frangelico
  • ICING
  • 200g butter
  • 3 cups icing sugar
  • 1 tablespoon frangelico
Instructions
  1. Pre heat the oven to 180C
  2. Combine the flour, sugar and baking powder together into a bowl. Set aside.
  3. Melt the butter in the microwave and then whisk in the milk and eggs.
  4. Combine the wet mixture and the dry mixture together, then stir through the peanut butter, hazelnuts and the frangelico.
  5. Spoon the mixture into cupcake cases 2/3 full.
  6. Bake for 20-30mins
  7. To make the icing, place the butter into a bowl and beat with and electric beater until light in colour. Then turn the beater down to low and add the sugar and frangelico. beat until combined.
  8. Place into a piping bag and pipe onto the cooled cupcakes.
