Chocolate and Walnut Cookies

Chocolate and Walnut Cookies oh my……… These cookies are sublime. Some times I avoid using walnuts because I find they have a bitter after taste that I’m not to fond of. Does anybody else or is it just me?

Anyway I had a stash of walnuts that were left over from a carrot cake I made and I wasn’t to sure what to do with them. So when in doubt I always make cookies, why? Because cookies are easy, thats why! Plus who doesn’t love a cookie when their in a funk? mmmmm Big glass of milk and warm cookies, thats enough to make my week!!

Apple and Cinnamon Tart with Rose Apples

Ever wonder how to bake an Apple and Cinnamon Tart with cute little roses? Its easier than you think!

This Apple and Cinnamon Tart reminds me of summer time, its like an apple pie but way lighter. Does that mean you can eat more of it? Hell Yeah! I think so. If you want a traditional apple pie, I can hook you up with one of those right here

This tart looks complicated with all the little roses, but its really not, just a little more time consuming than I normally spend on my baking, I am after all a pretty lazy baker, I love an easy recipe, who doesn’t? But for a bit of a change and a bit of a wowser kinda tart I recommend spending the time to make the roses.

Apple cinnamon tart

To make the roses I found it easier to work with the apple if I heated them in the microwave with a splash of water to soften them. It made it easier for me to bend the apple without it snapping. Just a little tip I found worked for me, you might not find it useful.

This tart is perfect with a huge serving of vanilla ice cream or some whipped cream, but the tarts pretty bloody good all on its lonesome as well. Its crunch and light all at the same time, you’ll keep going back for more, I can guarantee it.

Christmas Wreath Pavlova

Christmas pavlova

Pavlovas are the best dessert in my opinion! Christmas wreath pavlovas take it one step further, but anything for Christmas is better, am I right or am I right? This one is way bigger than my normal pavlova with 9 egg whites used rather than the normal 4, but you don’t see me complaining. Bigger is always better. I love to cover my pavlovas in fresh fruit but if you want something a little different try my Coffee Pavlova or you can try my Chocolate Pavlova , both are amazing but its Christmas so make the wreath.

This Pavlova wasn’t actually going to be a pavlova, but I had a massive fail in the kitchen and ended up making scrambled eggs out of my custard that was meant for a tart. So I had all these egg whites left over, what’s a girl to do but make a Pavlova?! When life doesn’t turn out how you imagined there is always something else you can try. I went back to my tried and true the classic pavlova. Sometimes you feel like you are no good at anything, for me even baking, thats when you need to step up and keep going forward and continue to do what you love even when it doesn’t turn out and you fail miserably.
