Freshly Baked Beer Bread

DSC_2823Yay, something out of the box, finally a savoury dish!!!!

I haven’t posted anything savoury on the blog for an eternity, I’m going to take a leap of faith and say for about 2 years?? Thats far to long! We all know this girl loves a sweet treat but sometime you can’t bet something savoury, am I right? You know I am 🙂  Especially when you live and breath sugary baked goods. So it brings me great joy to deliver this Beer Bread to your computer screens, or whatever device you are looking at the blog on 🙂

I happened to find myself with a half a bottle of left over Beer, that had been sitting out all night. So instead of pouring it down the sink, I thought yeah baby, I could do with some freshly bread for an afternoon snack!! Which sadly turned into my dinner, because I could get enough of it and kept eating till I could eat no more. The bread is best eaten as soon as it comes out of the oven, its soft and crunch and just down right awesome. I had some more today and it was still good but no where near as good as last night. I ate it with some cheese and some AMAZING tomato relish, that I had been given by a wonderful lady who lives in Tasmania. She sent some of her relish back with my dad and a few beautifully hand written recipes. That I can’t wait to bake and show you all. If the recipes are as good as this relish, we are all in for such a treat. I’m trying to get the recipe for the relish, yep its that good. It should be award winning, hey it probably is, I’ll have to ask her.

I know your not all as lucky to eat this bread with the relish I got to eat it with, but I’m sure you can find something half as good to go with it. Even some butter would be pretty fantastic, who doesn’t love bread and butter!! What do you love on your freshly baked bread??? Details people?

Freshly Baked Beer Bread
Author: Sophia Purvis
Prep time: 2 hours
Cook time: 30 mins
Total time: 2 hours 30 mins
Ingredients
  • 2 ½ cups self raising flour
  • 1 tablespoon white sugar
  • pinch of salt
  • 2 tablespoons of olive oil
  • 1 cup of beer
Instructions
  1. Sift the flour into a bowl and add the sugar and salt.
  2. Pour in the olive oil and the beer then place in an electric beater with a dough hook attached, knead for 10 mins.
  3. Place in an oiled bowl and cover with glad wrap.
  4. Leave to rise in a warm place, it should double in size.
  5. Pre heat oven to 180C
  6. Remove the dough from the bowl and knead a couple of times by hand.
  7. Work into the desired shape and place onto a tray.
  8. Bake for 30 mins or until it sounds hollow.

Ginger Loaf

Hello My dear loyal readers, sorry I have been so slack in posting anything, I hope you are still out there and haven’t lost interest in my little blog.

I thought it was about time I pulled my head out of the sand and put something up. So today I give you a ginger loaf, which is so comforting as winter has approached and you want something filling and satisfying. Its pouring with rain at the moment in Melbourne and doesn’t show any signs of stopping, good for the garden, but not good for the washing. The type of weather its best to stay in bed and keep the blankets firmly pulled over your head, which is exactly what I did….

The easiest fruit loaf you will ever make

My Mum doesn’t bake very much, well not at all really, but this loaf she has been making it quite a lot lately. She has been changing the recipe each time she makes it, she has made fig ones and cranberry ones, this one though was my favourite apricot and prune. The recipe hails from good old New Zealand and is from G, a lady who for all my life has always been there for me. Its her 1 cup loaf, she puts in one cup of everything, its pretty healthy, well its probably the healthiest baked good to make it to this blog. My mum took out some of the sugar which I think made it even better for the apricot and prune one as the fruit are very sweet themselves. I hope you enjoy, I’m pretty sure you will.

One cup wonder Fruit Loaf
 
1 cup oat bran
1 cup of raw sugar (you can reduce this to 1/2 cup depending on the fruit you use)
1 cup self raising flour
1 cup of dried fruit (anything you like)
1 cup milk
 
Pre heat a oven to 170C
 
Mix the dry ingredients together and add the milk, the mixture will seem very wet but this is normal. 
Pour into a lined loaf tin and bake for 1 hour or until cooked. Test with by inserting a skewer into the centre of the loaf, if it comes away clean the its cooked. Cool on a wire rack.
